What is buffalo mozzarella?
Mozzarella di bufala is a buffalo milk fresh cheese originating from the Campania region, in southern Italy. The buffalo mozzarella we know today was first made in the 18th century, but its origins are much older. In fact, the first records of buffalo in Campania date back to the 12th century!
Nowadays, it is produced all over Italy, but the best one is still made in the Campania region, in the area around the city of Naples. This is because the buffalo thrive in the humid climate and lush pastures of this area.
How is it made?
The traditional way to make buffalo mozzarella is still used today. Fresh buffalo milk is firstly brought to a boil and then mixed with rennet, which makes the milk coagulate. Once the curd has formed, it is separated from the whey. Then, the it is left to mature in the whey for about 5 hours, after which it is reduced into strips spun in water at 95 ° C. The pieces are left in cold drinking water and in brine for variable times. Once packaged, the mozzarella is preserved in the preserving liquid.

Characteristics of buffalo mozzarella
